From the moment we stepped into M Dining, the ambiance already hinted at the experience to come—refined, stylish, and inviting. But it was the food that truly swept us away.

A Meaty Masterpiece: Argentinian Black Angus Short Ribs

The highlight of the evening, without a doubt, was the Argentinian Black Angus Short Ribs. Charcoal-grilled to perfection, each bite was tender and bursting with flavour, thanks to the sticky and umami-rich fish sauce caramel glaze. What elevated the dish further was the accompanying Thai green mango salad, offering a crisp, tangy contrast that refreshed the palate with every mouthful. The combination was nothing short of exquisite—a harmonious play between richness and acidity.

Crab Delight Slider: A Coastal Bite with a Punch

We next sampled the Crab Delight Slider, and true to its name, it was a delight. The soft shell crab delivered a satisfying crunch, while the tom yum mayo dressing brought a spicy, tangy kick that lingered just enough to make you reach for the next bite. Sandwiched between soft pillowy buns, it was a clever Thai twist on a Western favourite—playful, bold, and addictive.

Double Delight Poultry: Layers of Texture and Spice

If you enjoy complexity in your chicken dishes, the Double Delight Poultry is a must-try. The chicken, sous vide and then char-grilled, was tender and juicy with a smoky edge. The coconut chilli jam added a sweet-heat depth, perfectly complemented by a crunchy cashew nut topping. The pickled green papaya salad and hints of lime leaf on the side brought brightness and tang, rounding out the dish with refreshing contrast.

Fried Paku: A Crisp Local Favourite with Thai Flair

The Fried Paku was a pleasant surprise that perfectly showcased M Dining’s ability to celebrate local produce with a Thai touch. The young fiddlehead ferns were lightly battered and fried to a delicate crisp, retaining just enough of their natural earthiness. Each bite offered an addictive crunch, and when dipped into the house-made chilli dip, the flavours came alive with a burst of heat and zest. It was the kind of side dish that had us going back for more—comforting, flavourful, and proudly rooted in regional taste.

A Symphony of Thai-Inspired Desserts

Dessert at M Dining is far from an afterthought—it’s a continuation of their creative storytelling.

  • Tub Tim Krop Reimagined was an elegant nod to tradition. The candied water chestnuts remained the star, but the addition of coconut ice cream and slivers of jackfruit gave it a luxurious twist. A balance of creamy, chewy, and crunchy textures made it both nostalgic and novel.
  • For something creamy yet light, the Creme Brûlée stood out. Infused with ginger and lemongrass, it took the classic French dessert and turned it into a vibrant Thai creation, with a subtle spice that lingered beautifully.
  • The Double Happiness was exactly that—a spoonful of joy. The coconut pannacotta was silky and mildly sweet, while the coconut jelly added a bouncier texture. It’s the kind of dessert that makes you want to close your eyes and imagine a tropical breeze.
  • Last but not least, the Palm Sugar Bliss brought a refreshing close to the meal. The palm sugar jelly, tender sago pearls, and fresh tropical fruits offered lightness and a delicate sweetness that cleansed the palate.

Signature Drinks That Complete the Experience

To accompany our meal, we tried their playful Teddy Bear Thai Milk Tea and Teddy Bear Thai Green Milk Tea—as fun to look at as they were to sip. For something more refreshing, the Iced Lemongrass Tea and Coconut Pandan Water were aromatic and soothing, perfect for balancing out the spicier dishes.

M Dining isn’t just a place to eat—it’s where you go to experience how tradition and innovation can dance together on a plate. Every dish reflected a deep respect for Thai culinary heritage, with bold reimaginings that felt both refined and deeply satisfying.
