Hilton Hotels Unveils Cross-Border Culinary Collaboration

DoubleTree by Hilton properties across Malaysia invite guests to embark on a unique culinary journey with the launch of their inaugural seven chefs exchange program, Signatures Across the State: A Makan Kitchen Showcase. This cross-over promotion brings together chefs from different Makan Kitchen outlets to create diverse dishes, blending their talents and flavors for innovative culinary creations.

From June 1st to 30th, each DoubleTree by Hilton property across Malaysia will host a chef from another Makan Kitchen outlet. With specialties ranging from Javanese Heritage to Nyonya Peranakan Cuisines, the chefs will showcase the rich diversity of flavors that define the Makan Kitchen brand.

At Makan Kitchen, guests will experience a gastronomic journey through Malaysia’s diverse culinary landscape, where traditional flavors meet contemporary twists. From the bustling streets of Kuala Lumpur and Penang to the tranquil villages of Perak, each dish tells a story of Malaysia’s cultural heritage and culinary traditions. The restaurant’s open-kitchen concept invites guests to witness the culinary magic unfold as talented chefs prepare an array of dishes. Makan Kitchen is renowned for its delectable cuisine and warm, welcoming ambiance, making it an ideal dining destination for families and corporate gatherings alike.

The Makan Kitchen Showcase schedule features a tantalizing array of themes and menus, each presenting a distinct facet of culture, state specialties, and beloved flavors:

DoubleTree by Hilton Shah Alam will feature Johorean Old Time Favorites by DoubleTree by Hilton Johor Bahru’s Chef Jais Bin Manan. Menu highlights include Ayam Goreng Berempah Wangi, spiced fried chicken that’s crispy and aromatic, and Ikan Bawal Kari Mamak Singapore, a silver pomfret fish curry with a rich, spicy sauce. Other dishes are Daging Masak Hitam, a tender beef dish with dark soy sauce; Telur Sotong Majidee, a savory squid egg dish; Lamb Shank Briyani Batu Pahat, a flavorful lamb shank biryani; Mee Rebus Johor Warisan, a traditional Johor noodle dish with a rich gravy; and Kacang Pol Haji, a hearty fava bean dish. Price: RM 158 nett per adult, RM 79 nett per child (Friday and Saturday only).

DoubleTree by Hilton Kuala Lumpur will feature Javanese Heritage by DoubleTree Putrajaya Lakeside’s Chef Muhamad Khairi. Menu highlights include Ayam Penyet, a crispy fried chicken served with spicy sambal and fresh vegetables, and Bakso, a flavorful meatball soup that warms the soul. Other dishes are Lamb Opor, a rich and tender lamb stew; Longing Balap, a savory dish with complex spices; Nasi Ambeng, a traditional communal dish; Puyuh Ungkap, a flavorful quail preparation; and Pecal, a refreshing vegetable salad with peanut sauce. Price: RM 128 nett per adult, RM 64 nett per child (weekday); RM 158 nett per adult, RM 79 nett per child (weekend).

DoubleTree by Hilton Putrajaya Lakeside will feature Borneo Cuisines by DoubleTree by Hilton Kuala Lumpur. Menu highlights include Umai Ikan dan Latok, a traditional fish and seaweed salad that’s light and tangy, and Kerabu Petai dan Rebung, a tangy and slightly bitter salad of petai and bamboo shoots. Other dishes are Sabah Tiger Prawn & Asap Terung, juicy prawns with smoked eggplant; Umai Ikon Nasi Goreng Dab, a fragrant fried rice dish; Manok Pansoh, a chicken dish cooked in bamboo for a unique flavor; Laksa Sarawak, a rich and spicy noodle soup; and Daub Ubi Tutu, a traditional tapioca dish. Price: RM 148 nett per adult, RM 74 nett per child (Saturday only).

DoubleTree by Hilton Melaka will feature Flavors of Indian Borneo Cuisine by DoubleTree by Hilton Shah Alam i-City’s Chef Wilson Bin Ibid. Menu highlights include Lamb Shank Banjaran Crocker, a hearty and tender lamb shank stew, and Tandoori Chicken Bambangan, marinated chicken with a tangy wild mango that adds a burst of flavor. Other dishes are Bharavaan Aloo Jheenga, a stuffed potato dish with prawns; Indian Lamb Pansuh, a traditional lamb dish cooked in bamboo; and Scallop Mai Latok, a refreshing scallop dish with seaweed. Price: RM 130 nett per adult, RM 69 nett per child (Friday and Saturday only).

DoubleTree by Hilton Johor Bahru will feature Nyonya Cuisine by DoubleTree by Hilton Melaka’s Chef Davian Foong. Menu highlights include Otak-Otak, a savory fish cake wrapped in banana leaves with a delicate hint of lemongrass, and Seabass with Nyonya Sauce, a perfectly cooked fish in a rich, tangy sauce. Other dishes include Udang Masak Lemak Nenas, a creamy prawn dish with pineapple; Ayam Pongteh, a savory chicken and potato stew; Nasi Goreng Udang Sambal Belacan, spicy fried rice with prawns; and Duck and Salted Vegetable Soup, a comforting and savory soup. Price: RM 128 nett per adult, RM 64 nett per child (Sunday – Thursday).

DoubleTree Resort by Hilton Penang will feature Perak Culinary Heritage by DoubleTree by Hilton Damai Laut Resort’s Chef Muhamad Bin Muhidin. Menu highlights include Sup Kambing, a rich and aromatic mutton soup, and Pais Ikan, a marinated fish dish wrapped in banana leaves and grilled to perfection. Other dishes include Rendang Tok, a slow-cooked beef dish with deep, complex flavors; Ikan Masak Lemak Tempoyak, a creamy fish dish with fermented durian; and Assam Pedas Tetel, a spicy and tangy beef stew. Price: RM 158 nett per adult, RM 128 nett per senior citizen, RM 98 nett per child (every Saturday).

DoubleTree by Hilton Damai Laut Resort will feature Nyonya Peranakan Cuisine by DoubleTree Resort by Hilton Penang’s Chef Hong Swee Aun. Menu highlights include Char Kway Teow Arang, a smoky stir-fried noodle dish with a perfect balance of flavors, and Kapitan Chicken, a rich and flavorful chicken curry with a hint of coconut. Other dishes are Yam Duck, a savory duck dish with yam; Ju Hu Char, a stir-fried jicama and cuttlefish dish; Nyonya Steamed Fish, a delicately steamed fish with Nyonya spices; and Asam Pedas Prawn, a spicy and sour prawn dish. Price: RM 80 nett per adult, RM 40 nett per child (Sunday – Thursday); RM 128 nett per adult, RM 64 nett per child (Friday and Saturday).
