One of the evening’s standout highlights is the Nasi Tumpang, a treasured delicacy from Kelantan that is rarely found outside the East Coast. Beautifully layered and accompanied by rich curries, the rice is fragrant and comforting, while the accompanying fish curry, chicken and beef offer deep, well-balanced flavours that perfectly complement the rice. Another Kelantan favourite, Singgang Ikan, impressed with its clean yet aromatic broth. Simmered gently with turmeric, galangal, garlic, shallots, dried chillies and tamarind, the soup delivers a delicate balance of sourness and natural sweetness. The Ikan Pekasam celebrates one of Malaysia’s oldest preservation techniques.
