At DoubleTree by Hilton Kuala Lumpur, the newly launched Raja Laut Malaysia Seafood Buffet delivers just that: a vibrant, flavorful tribute to the archipelago’s beloved seafood traditions, served up in style every weekend.

Held at Makan Kitchen, the hotel’s signature dining venue, the buffet is a colourful, sensory experience that promises something for every palate—and plenty to keep the little ones entertained too.

A Showcase of Freshness and Flavour

The Seafood on Ice station is the perfect way to kick off the evening. Featuring a chilled selection of prawns, mussels, clams, and more, everything is pristinely presented and wonderfully fresh. A dash of lemon and a side of tangy Thai seafood sauce brings the briny sweetness of the crustaceans to life.

One of the show-stealers was the Poached Whole Seabass with Ginger and Scallion Chile Paste. The fish was silky and moist, absorbing the delicate heat from the house-made chili paste while allowing the natural sweetness of the seabass to shine through. A classic Chinese-style preparation elevated with a touch of spice.

The Udang Masak Lemak Cili Api dan Nenas Sarawak added a welcome Malay touch. This dish brought together the creamy, spicy coconut gravy and the tartness of pineapple—balanced beautifully against plump, juicy prawns. The Sarawak influence came through in the spice blend, which added a unique kick without overwhelming the dish.

Over at the grill station, the Whole Baked Salmon Papilote Ikan Bakar was both visually striking and flavourful. Wrapped in banana leaf and baked with fragrant spices, the salmon remained tender and flaky, with charred edges that hinted at smoky heat and lemongrass undertones.

Spice lovers will appreciate the Stir-Fried Kam Heong Flower Crab—a messy, finger-licking treat with that unmistakable wok hei aroma. The kam heong sauce was robust with dried shrimp, curry leaves, and a mild heat that lingered pleasantly.

A unique addition to the buffet was the Mud Crab Dum Biryani Rice—a luxurious fusion of South Asian biryani with the richness of mud crab. The rice was fluffy and aromatic, perfumed with saffron and spices, with generous chunks of crab tucked throughout.

Rounding out the lineup was the Signature Tandoori Tabbies, a dish that combined traditional tandoori marination with fresh seafood. The result? Charred, smoky bites that were well-seasoned and juicy, perfect with mint chutney or wrapped in naan.

While adults revel in the culinary variety, the Kids Corner is equally impressive. With an arcade, racing simulator, and Nintendo Switch stations, children are kept engaged and happy—making this buffet a top choice for families seeking a lively dining experience.
