A Taste of Tradition, Refined for Today at One World Hotel’s Ramadhan Buffet

One World Hotel ushered in the spirit of the holy month with an exclusive preview of its upcoming Ramadhan buffet, “Selera Klasik, Jiwa Modern”, held at Cinnamon Coffee House. The preview evening welcomed close to 200 guests, including members of the media, lifestyle influencers and corporate partners, offering an early look at the hotel’s carefully curated Ramadhan dining experience.

The evening began with welcoming remarks before guests were taken on a guided walkthrough of the buffet highlights by Chef De’ Cuisine, Chef Zahid bin Zainal Rashid. Through this introduction, it became clear that the menu was shaped by a deep respect for the nostalgic and comforting nature of Ramadhan dishes. Rather than reinventing tradition, the culinary team focused on preserving familiar flavours while refining them through modern cooking techniques, cleaner finishes and more polished presentation.

This approach was reflected across the spread, which celebrated Malaysia’s rich culinary heritage. The Kambing Golek Bakar dengan Sayur dan Kentang served as a centrepiece of the buffet, with the lamb roasted until tender and juicy. Subtle spices enhanced the meat without masking its natural flavour, while the vegetables and potatoes absorbed the rich roasting juices, making the dish both hearty and comforting.

The Kari Kepala Ikan Merah delivered bold yet balanced flavours. The curry was robust and aromatic, with just enough tang to lift the richness of the gravy. The firm flesh of the red snapper head held up well to the spices, resulting in a dish that felt deeply traditional yet carefully executed.

Seafood lovers were drawn to the Sambal Udang Petai, where plump prawns were coated in a sambal that struck a pleasing balance between sweetness, heat and savoury depth. The petai added its signature bitterness, enhancing the overall complexity of the dish without overwhelming the palate.

Another standout was the Betis Kambing Ala Varuval, slow-cooked until tender and coated in layers of fragrant spices. The dry-style preparation allowed the spice blend to cling to the meat, delivering a satisfying intensity with each bite and showcasing how traditional flavours can be elevated through precise technique.

Adding a contemporary touch to the buffet were the interactive live cooking stations, including Teppanyaki, where dishes were prepared fresh to order. This element introduced a sense of theatre and freshness, complementing the more traditional offerings on the spread.

The dessert section paid homage to classic favourites. An assortment of traditional Malay kuih offered familiar sweetness and textures, while the indulgent Serawa Durian appealed to durian lovers with its rich and creamy profile. Lighter options such as Ice Kacang and Cendol provided a refreshing contrast, rounding off the meal on a cooling note.

The “Selera Klasik, Jiwa Modern” dining experience will be available from 19 February to 20 March 2026, offering guests several ways to enjoy the spread.
