Recently we have disovered a shop which is located in Kuchai Lama serving authentic ChaoShan cuisine which includes its signature Brined Goose and Live Seafood Clay Pot Porridge that you wouldn’t be able to taste at any other ordinary restaurant.

Living in a place with long days, extra sunshine, any rainy days and long coastlines, rice and seafood are the two main ingredients in ChaoShan foods. Around 100 known snacks have sweet or salty filings and are wrap with rice skins. They also eat large bowls of porridge with shopped pickle vegetables.

For fresh dishes, ChaoShan people love to have a plate of boiled or simply cooked seafood as one of their main dinner dishes. They are master of cooking various fish and never resist a chance to savor the freshness and sweetness of shellfish.

Why for we say it is authentic? The restaurant have hired a ChaoShan’s chef which has more than 15 years of experience in cooking ChaoShan’s cuisine.
“Chaoshan people would love to pay over 1,000 yuan to prepare a dish, but if you sit in a small, cheap Chaoshan food stall, you can treat yourself to a feast that tastes just as good as those served in a fancy Chaoshan restaurant,” Chef Chan said.

“A real Chaoshan chef cooks certain foods in an old-fashioned way and follows strict rules,” Chef Chan said. “Take making beef meatballs as an example, chefs prefer to hold thick steel rods in both hands and then hit the meat until it becomes a paste. Only by doing so can the meatballs become al dente.” In addition to the pursuit of the best food, Chaoshan people have also learned to stimulate their taste buds by adding contradictory flavors to their dishes.

“The two main flavors in Chaoshan food are salty and sweet,” Chef Chan said. “You can easily find those two flavors in a snack or a dish at a Chaoshan banquet. “They like strong flavor contrast and they somehow find the right balance, just like their complicated personality, which is both traditional and open-minded.”
Some other delicious dishes offered at ChaoShan Taste were:

In simple terms, the Chaoshan region refers to the four cities of Shantou, Chaozhou, Jieyang, and Shanwei in the “tidal plain”, and now generally refers to Shantou and Chaozhou. There are many labels about Chaoshan. In recent years, Chaoshan cuisine has become the most popular: low-key luxury connotation of the dishes, inexpensive snacks, a wide range of dizzying food stalls from the same food sources, Chaozhou and Shantou The style and characteristics of the cuisine are different. As a senior food resident of the local community, we share the private collections of old stores in Chaozhou and Shantou, and hope that more and more people will like my hometown.

Compared with Chaozhou, Shantou, more seafood, Shantou people prefer to use fish sauce (similar to soy sauce) seasoning, high-end dinner dishes, is to come to Shantou can not miss the culinary experience.
